Spaghetti Pie

I just love this recipe.  I love how easy it is to prepare, how wonderful it smells baking and how everyone asks for seconds!  It is my “go to” recipe when I need to take a meal to a friend or just need good, easy comfort food.  It is perfect with a salad and loaf of crusty bread.

Spaghetti Pie
Serves: 8

6 oz Spaghetti, cooked
2 T Butter or 2 T Olive Oil
2/3 C Parmesan Cheese, shredded
2 Eggs, large
16 oz Cottage Cheese, fat free
1 1/2C Mozarella Cheese, shredded
2 1/2 C Marinara Sauce

1.  Cook pasta al dente and drain.  Stir in butter (or olive oil), 1/3 C parmesan cheese, 2 eggs while pasta is still hot.

2. Spray baking pan with non-sticking spray or lightly coat with olive oil and place spaghetti in bottom of pan.

3.  Mix cottage cheese and 1 C mozarella cheese together and layer on top of mixture.

4.  Pour 2 – 2 1/2 cups of the marinara sauce on top of the cottage cheese mixture and top with the remaining mozarella and parmesan cheese.

Bake at 350 degrees F for 40-50 minutes.   Cool for 5-10 minutes before cutting.   Enjoy!
