Korean Beef & Rice

I work (for money) full-time and also run crazy full-time as a mom of two very busy girls.  I need easy, fast meals.  This one is just that with the added bonus that my family really likes it.  I like Korean flavors, so adjusted this recipe just a bit to make it a little healthier.   Give it a try and let me know what you think.

Korean Beef

1# Lean Ground Beef (or turkey)
3 Garlic Cloves, minced
3 Scallions, sliced thinly
1 T Ginger, fresh, minced
1/4c Soy Sauce, low sodium
1/4c Brown Sugar, packed
1 T Sesame Oil

1.  Brown ground beef/turkey.  Drain, if needed.  Return to pan.
2.  Combine garlic, scallions, ginger, soy sauce, brown sugar in a small bowl and mix well.
3.  Add soy sauce mixture to meat in the skillet and cook for a five minutes, add Sesame oil.

I serve Korean Beef with Brown Rice and it is usually gobbled up as soon as it hits the table!   If you want to add a good vegetable, steam and sauté broccoli or sugar peas in a little extra sauce.
